Menu Magic: Perfecting Our Whole Deboned Chicken
At Chefs Pantry, every dish we serve is the result of careful preparation, precise technique, and a genuine passion for food. Our Whole Deboned Chicken features on our family-style menu — one of the most popular service styles we offer at weddings and events across Cape Town and the Western Cape. It’s a dish that looks effortless on the plate but represents hours of work behind the scenes. Here’s how we make it.
The Marinade — Where It All Begins
We start with a whole chicken, meticulously deboned to ensure a seamless eating experience. The chicken is then submerged in a marinade of plain yoghurt, fresh lemon, fragrant thyme, and garlic — and left for a full 24 hours.
The yoghurt and lemon work together to tenderise the meat gently, whilst the herbs penetrate deep into every fibre. It’s a slow, deliberate process that lays the foundation for everything that follows.
Precision Cooking: The Sous Vide Method
After marination, the chicken is carefully wrapped, vacuum-sealed, and slow-cooked sous vide at a precise 63°C for four hours. The result is chicken that is extraordinarily tender and moist — a world away from the dry, overcooked versions so often served at events. Every bite retains its flavour and juiciness from the very first slice.
Dauphinoise Potatoes — A Labour of Love
Our Dauphinoise Potatoes are built layer by layer — sixteen layers in total — using paper-thin slices cut on a mandolin. A cream reduction infused with garlic, thyme, and bay leaves binds each layer together. Baked low and slow at 150°C before being pressed to achieve the perfect texture, these potatoes are as much a technical achievement as they are a pleasure to eat.
Mediterranean Vegetables — Individual Attention
We treat each vegetable separately, roasting them individually in olive oil, salt, and pepper to ensure each one reaches its peak. Toasted seeds in a soy sauce and herb blend and a vegan sun-dried tomato pesto add layers of complexity and texture to the finished dish.
The Finished Plate
Everything comes together on our signature black plates. A delicate yoghurt sauce is spread as the base, topped with golden-seared chicken and a perfectly portioned dauphinoise potato. Roasted Mediterranean vegetables, soy-toasted seeds, and fresh microgreens From Our Garden: Microgreens complete the dish with colour, texture, and a final touch of freshness.
